Latteria Salvia Maria
In the 1960s the Salvia family, who in Basilicata live from the breeding of Podolian cows, created a small laboratory for the production of cheese in the center of the town of Tito, where everyone began to know and appreciate Mrs. Maria's cheeses.
Since 1965, every day at the dairy we have processed cow's milk collected from local farms, located in high hill and mountain areas. Most of our processes involve the use of raw milk: we are able to guarantee an unmistakable taste to our cheeses while maintaining the peculiar characteristics and organoleptic properties of the milk unaltered, so as to find them in the finished product.
Today, refining our skills in the dairy sector and adding them to grandmother Maria's precious background, we continue to produce dairy products, with the right combination of history and innovation, essential characteristics for the spirit of the Salvia family, also reinterpreting the flavors of the past, without ever distorting them.
The recognition of this choice came in 2018, when our Provolone, in the variant aged in hay and in the traditional one, it was awarded as Best cheese in Italy at the national competition FomaggItalia.
