The founder was Giovanni Ciresa, our great-grandfather who began marketing cheeses in the valley with indomitable passion. Valsassina is rightly called the ""cheese valley"" due to its extraordinary presence of caves with a very favorable microclimate which gives a delicate taste and unmistakable organoleptic characteristics to the products. The first caves were dug in the heart of the mountain starting from the second half of the 19th century. The fresh produce for maturation was placed in the deep underground ""casere"". This natural heritage has made Valsassina famous, already renowned in those years for the production of Taleggio, giving rise to far-reaching entrepreneurial adventures in the dairy sector. Gildo, in the name of continuity, follows in his father's footsteps but expands the commercial area also reaching nearby Lecco. The dairy offering gradually becomes more complex, with the maturing of both typical cheeses from our mountains and some PDOs - Taleggio, Gorgonzola and Quartirolo - and in 1979 Gildo Formaggi was officially born. Walter, Gildo's son, is responsible for the beating heart of the family's production: goat's milk, the milk closest to breast milk.
