IL CACIOCAVALLO DEL MATESE
Our activity was born in 2019 at the foot of the Matese, with the aim of transforming the milk of our small farm by maintaining a 100% organic product. Our farm is located on the Matese mountains in the small village of Roccamandolfi (IS), which gives the cattle the best pastures among our mountains, so as to give our products the fresh and genuine flavor and perfume that the mountain gives us With its meadows and flowers! The dairy instead à © located in San Massimo, at the foot of Campitello Matese, where we carry out the transformation of our milk. All transformed products such as caciocavallo, pecorini, cow cheese, passite scamorze etc ... are worked on raw milk as usual, so as to keep all the flavors that the milk releases and give the product a unique flavor!
