ROBERTO CANTOLACQUA PASTICCERE

Roberto Cantolacqua, pastry chef and owner of the Mimosa pastry shop, was born in Tolentino in 1982 and discovered his passion for desserts and all leavened products from an early age thanks to the presence of his baker grandfather. So after graduating from hotel school, he began working in the pastry shop ""la Mimosa"" in Tolentino. This reality becomes a stimulating starting point for his career. He attended numerous courses with great Italian and international pastry chefs, and on one of these occasions he met and became a great friend of Graziano Giovannini who taught him and passed on to him his passion and love for croissant decoration and natural yeast. He took part in various competitions, winning three gold and four silver medals and in 2009 he became part of the Marche Regional Chefs Team. After more than ten years of apprenticeship, in 2009, he decided to take over the business to start a new adventure with the ""Mimosa"" pastry shop in Tolentino. Thus he began to introduce his customers to the art of traditional and international pastry making by working with excellent raw materials from the Italian territory. In 2012 he joined the Accademia Maestri Pasticceri Italiani, a prestigious association that brings together the best Italian pastry chefs, united by the desire to promote the quality and professionalism of the Italian pastry tradition.
