Az. Agricola I Benedettini - Oliveti & Biological Frantoio - is a project that arises from love and passion for its origins. Olive growers of four generations, but only from the beginning of the new century, with the current ""mission"". With the generational renewal, in fact, a corporate policy has been adopted that aims to privilege quality respecting nature. To be transformed into oil are exclusively the olives from the organic corporate olive groves since 2000 and which have sinked their roots between the thirteenth and fourteenth centuries when the Benedictine monks took care of it, who took office in the local abbey adjacent to the cave of San Michele Archangel, now Sanctuary and Site Unesco Heritage. The centuries -old plants make sure that a strong presence of native cultivars, the ""roundabout"" and the ""bell -chips"". In a territory with a very high olive vocation, 500 meters. altitude, where the terroir perfectly marries the dictates of organic agriculture, our work, defined heroic and which we want slowly, away from the rhythms of industrial production, allows us to produce an oil with low acidity, rich in polyphenols and with a high aromatic profile. The collection takes place with the help of mechanical facilities, when the olives are partially invasted and to avoid heating risks and harmful fermentations are placed in special drilled boxes to be immediately transported to a mill, where they promptly pass to the washing and start to the crushing. Our company oil mill, newly installed, is a modern continuous cycle system equipped with thermocontrolled machines and a two -phase final extractor (technically horizontal decanter) that works in the absence of added water, all peculiarities these that allow us to have a real ""Cold Extraction"" process with managed temperatures lower than 25 ° C. The final product is a blend that is green with golden yellow reflections. A medium olive fruity that expresses a slight perfume of herbaceous with hints of fresh apple and almond. To the tasting, the notes of bitter and spicy are present in equal measure and do not disturb, procuring a valuable balance. There is an excellent fluidity that leaves the mouth immediately clean. An extra virgin olive oil from organic agriculture with excellent parameters to satisfy the consumer attentive to natural flavors.
