The Cariani company has been a family -run Umbrian company that has been operating in the 1960s sector since the 1960s. The founder of the company, Enrico Cariani, has started the activity with the marketing of pigs in the local market. In the early 1980s, the son Giuliano, the current owner, included the production of artisan porchetta with the processing and cooking phases of the pork in porchetta. Today Cariani is one of the most important Porchetta manufacturers in Central Italy. The modern factory, located in Montefalco (PG), near Bevagna, is unique in size and characteristics, at national level, among those specialized in the exclusive production of Porchetta. It extends for 900 square meters and is equipped with 5 refrigerated cells used for both the storage of the slaughtered pigs and to the cooling and maintenance of the cooked sluts, a room for the processing of meat and a large cooking room with a capacity of 8 electric ovens with two pigs each. The company has an annual production capacity of 12,000 porchette. The company is CE 9-2207/L and IFS (International Food Standard) certified. The Porchetta Umbra is one of the traditional Italian agri -food products for the link with its territory and its history.
