Altura Trota Alpina Affumicata
Altura was born in 2019 by the idea of ??Lorenzo and Edoardo, mountain lovers and good food. Our goal is to make known and render the smoked trout, a forgotten gastronomic excellence, re-educating the market for the consumption of Italian freshwater fish and above all alpine. Our passions have been a good starting point, but at some point the need to answer a question was born in us: ""The fish world is vast and often confused. Everyone knows that the fish is good, but are we sure that this is worth all the fish? "" We want a more sustainable future, and of high quality. Both things that now is obvious that current intensive fishing technologies can no longer guarantee. The long production chains have led us to detach ourselves too much from responsibility towards the environment that surrounds us, and we wanted to make a more responsible choice. From this consideration it is born the project to create a network that combines the most virtuous breeders of the Valle d'Aosta and Piedmont Alps. Small low density farms, who coexist with the environment that surrounds them and respect the trout, leaving them space and time to grow with natural nutrition and without the use of antibiotics.
