Gaudioso pasta has a tradition linked to an ancient water mill that was used for grain mill, in 1908 in Mazara del Vallo. The story goes back to an old relative that has handed down to the Gaudius family love and respect for the nature that surrounds us and for the products. In the time of milling everyone gathered and this represented a moment of aggregation. There was the charm of conversing while waiting and entertaining time with stories and stories of life experienced. But in a poor country of natural resources, relatively overpopulated, the appointment with the processes of industrialization did not later arrive. At a distance of many years in 2013 a passage of awareness has occurred, growth in relationship with nature and with its fruits, consisted in detecting ancient traditions and family experiences and to give answers to the needs of a company and a model Evolved now. So Giuseppe Gaudioso, a young entrepreneur, decides to open a pasta factory in his city, Mazara del Vallo, after having lived for several years abroad. Thus was born the Gaudiosi Pasta Company, which produces crafted dry pasta and pays attention to ancient grains and well-being that only authentic pasta knows how to give. The mission of Gaudioso pasta is to promote the Sicilian tradition in the world, spreading a healthy and genuine food style. Gaudious pasta uses as a conservation method, drying at low temperatures. The pasta is dried slowly and at low temperature which allows to preserve all the nutritional values ??of the ingredients: the total maintenance of proteins, of amino acids present in raw materials. A slow drying under 50 degrees for 72 hours of rest, it allows pasta to maintain high nutritional values ??and organoleptic capabilities this is fundamental to be fundamental for a healthy diet and for the digestibility of the dough itself. Gaudioso pasta uses only native Sicilian grains such as perciasacchi, tumminia grain and many other benevolent health recognized. In nature there are several species of ancient grains, many of which have been spontaneously adapted to the territory for climate, altitude and type of soil. Sicilian ancient grains have not suffered genetic alterations, are less refined, they have less gluten, they are light and digestible. Furthermore, using Sicilian ancient grains the small producers of the territory are helped and biodiversity protects. Gaudioso pasta defines an ethical company, founded its activity on moral conduct rules that lead it to carry out the business activity explicitly protecting social and environmental aspects.
